1 pound raw ground beef (80–90% lean)
1 teaspoon kosher salt (divided, plus more to taste)
1/2 teaspoon black pepper (divided, plus more to taste)
2 cups ricotta cheese (whole milk or part-skim)
1 large egg
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh parsley (plus extra for garnish, optional)
2 cups jarred marinara or pasta sauce
8–10 no-boil lasagna noodles (enough to make 3 layers in your dish)
1 1/2 cups shredded mozzarella cheese

Preheat your oven to 375°F (190°C). Lightly grease a glass 9×13-inch casserole dish with olive oil so the lasagna doesn’t stick.
Season the raw ground beef in a mixing bowl with about 1/2 teaspoon of the salt and 1/4 teaspoon of the black pepper. Use clean hands or a spoon to gently break it up and mix in the seasoning without compacting it too tightly.
