Nana Pearl’s Lemon Blueberry Freezer Salad

Ingredients
2 cups frozen blueberries
2 (6-ounce) containers lemon yogurt
1 (8-ounce) tub frozen whipped topping, thawed
2 tablespoons powdered sugar (optional, for extra sweetness)
1 teaspoon lemon zest (optional, for more lemon flavor)
Nonstick cooking spray or a thin layer of neutral oil for greasing the dish
Directions
Lightly grease a medium white ceramic casserole dish (about 8×8 inches or similar) with nonstick spray or a thin swipe of neutral oil. This helps the frozen salad release more easily when you scoop it.
In a large mixing bowl, add the lemon yogurt and powdered sugar (if using). Whisk or stir until smooth and fully combined so there are no streaks of sugar.
Gently fold in the thawed whipped topping with a spatula until the mixture is smooth, pale yellow, and fluffy. Try not to overmix so it stays light and airy.
