This little cheesy beef skillet bake reminds me of the kind of thing my mother would throw together on a busy harvest night, when no one had time for fussy recipes but everyone still expected something hot and comforting on the table. It’s the sort of dish that grew up in farmhouse kitchens all over the Midwest—simple, hearty, and made from what you almost always had on hand. With just three ingredients, it’s proof that you don’t need a long grocery list to make something that feels like a hug at the end of the day. You might want to make this when you’re tired, the cupboards look a little bare, or you just want that old-fashioned, cheesy, beefy goodness without a lot of fuss or dishes.
This skillet bake plays very nicely with the usual Midwestern suspects. A simple green salad with a tangy dressing helps cut through the richness, and a side of buttered corn or green beans makes it feel like a Sunday supper, even on a Tuesday. If you’re feeding hearty appetites, serve it with warm dinner rolls or slices of buttered toast to scoop up the cheesy beef. For something a bit more old-timey, a small dish of applesauce or pickled beets on the side adds a sweet-and-sour note that balances the savory skillet. And if you happen to have a jar of dill pickles in the fridge, set it on the table—no one will complain.
3-Ingredient Cheesy Beef Skillet Bake
Servings: 4 servings

Ingredients
1 pound ground beef (80–90% lean)
2 cups shredded cheddar cheese (or your favorite melting cheese)
3 cups frozen tater tots (about half a standard 32-ounce bag)
Directions
Preheat your oven to 375°F (190°C). Place an oven-safe 10- to 12-inch skillet (cast iron works beautifully) on the stovetop.
Add the ground beef to the skillet over medium heat. Cook, breaking it up with a spoon, until it is browned and cooked through, about 7–10 minutes. If there is a lot of grease, carefully spoon off most of it, leaving just a light coating for flavor.
Spread the cooked beef evenly over the bottom of the skillet, pressing it gently into an even layer so every bite gets some meat.
Sprinkle 1 cup of the shredded cheese evenly over the beef layer. This will melt down into the meat and help everything hold together a bit like a crust.
Arrange the frozen tater tots in a single, even layer on top of the cheese. They don’t have to be perfect, but try not to stack them so they can crisp up nicely.
Place the skillet in the preheated oven and bake for 20–25 minutes, or until the tater tots are golden brown and crisp around the edges.
