Ingredients
1 (3 oz) box orange flavored gelatin
1 cup boiling water
1/2 cup cold water
1 (3.4 oz) box instant vanilla pudding mix
1 (8 oz) tub frozen whipped topping, thawed
1 (11 oz) can mandarin oranges, drained well
2 cups mini marshmallows
1 teaspoon vanilla extract (optional)
Pinch of salt (optional, to balance sweetness)
Directions
In a medium mixing bowl, add the orange gelatin. Pour in the boiling water and whisk until the gelatin is completely dissolved, about 1–2 minutes.
Stir in the cold water, then let the mixture sit on the counter for about 10–15 minutes to cool slightly. You want it warm but not hot so it doesn’t melt the whipped topping later.
Whisk the instant vanilla pudding mix into the cooled orange gelatin until smooth and no dry bits remain. The mixture will start to thicken slightly. Cover the bowl and refrigerate for about 15–20 minutes, just until it is soft-set and the texture is like loose pudding.
Once the orange pudding base has thickened, gently fold in the thawed whipped topping with a spatula. Take your time and fold rather than stir so it stays light and fluffy.
