There’s something about a pot of potatoes slow-cooking away that takes me straight back to my mother’s kitchen on Sunday afternoons. These 4-ingredient garlic potatoes are the kind of simple, no-fuss dish that has quietly fed farm families and church potlucks across the Midwest for generations. Baby potatoes weren’t always easy to find when I was growing up—most of us just had whatever came up in the garden—but when they did show up, they felt like a little treat: tender, bite-sized, and perfect for soaking up butter and garlic. This slow cooker version lets you tuck everything in before the day gets busy and then forget about it until mealtime. It’s the sort of recipe you make when you want real comfort with almost no effort, the kind that fits right in beside a roast on a chilly evening or a simple grilled supper on the back porch.
These garlic potatoes cozy up nicely to just about any main dish. They’re especially good alongside a pot roast with carrots and onions, or a simple pan-fried pork chop with a little gravy on the side. In the summer, I like to serve them with grilled chicken or burgers, letting the potatoes stand in for both a starch and a vegetable. A crisp green salad or some buttered green beans balance out the richness, and if you really want to lean into that Midwestern comfort, add a pan of warm dinner rolls so you can swipe up every last bit of buttery garlic from the plate.
Slow Cooker 4-Ingredient Garlic Baby Potatoes
Servings: 6

Ingredients
2 pounds baby potatoes, rinsed and left whole (or halved if large)
4 tablespoons unsalted butter, melted
4 cloves garlic, minced (or 1 1/2 teaspoons garlic powder)
1 teaspoon kosher salt, plus more to taste
Directions
Rinse the baby potatoes well and pat them dry with a clean towel. If some are noticeably larger than the others, cut those in half so they cook evenly.
Lightly grease the inside of your slow cooker with a bit of butter or cooking spray to keep the potatoes from sticking.
In a small bowl, stir together the melted butter, minced garlic, and salt until the garlic is evenly distributed.
Add the potatoes to the slow cooker and pour the butter-garlic mixture over the top. Toss gently with a spoon or your hands to coat all the potatoes well.
Cover and cook on LOW for 4–5 hours or on HIGH for 2–3 hours, until the potatoes are very tender when pierced with a fork.
