2 cups semisweet chocolate chips
4 cups crispy chow mein noodles
36 small candy-coated chocolate eggs (about 3 per nest)
Directions
Lightly grease or line a square 8×8-inch baking dish with parchment paper so the nests are easy to remove later. Set aside on your kitchen counter.
Place the semisweet chocolate chips in a microwave-safe bowl. Microwave on HIGH in 20–30 second bursts, stirring well after each burst, until the chocolate is completely melted and smooth. This usually takes 1–2 minutes total. (You can also melt the chocolate in a heat-safe bowl set over a pan of gently simmering water, stirring until smooth.)
Add the crispy chow mein noodles to the melted chocolate. Gently fold the noodles into the chocolate with a spatula until every noodle is well coated and glossy. Work slowly so you don’t crush the noodles too much—you want that twiggy, nest-like texture.
Spoon small mounds of the chocolate-coated noodles into the prepared square baking dish, spacing them slightly apart so you can see individual nests. Aim for 12 nests, but you can make them smaller or larger depending on how many you need.
Use the back of the spoon or your fingers to gently press a little indentation in the center of each mound to form a nest shape. Don’t worry about making them perfect; the uneven, scraggly look is what makes them so charming and realistic.
While the chocolate is still soft, press 3 small candy-coated chocolate eggs into the center of each nest. Gently push them down so they stick but still sit up nicely in the middle. The colorful eggs should be clearly visible against the shiny brown nests.
Let the nests sit at room temperature on the counter until the chocolate is fully set and firm, 1–2 hours. If you’re in a hurry, you can place the baking dish in the refrigerator for about 20–30 minutes to speed things up.
