Nana always had a huge bowl of this waiting on the counter when we visited for spring break. So crunchy and impossible to stop eating once you start.

This lemon-coated cereal snack is my modern take on the big bottomless bowl my Nana always had waiting on the counter when we visited for spring break. It’s crunchy, sweet-tart, and completely impossible to stop grabbing handfuls of as you walk through the kitchen. Think of it like a bright, lemony twist on cereal snack mix: corn squares folded into a thick, whipped white chocolate and lemon coating, then dusted in powdered sugar. It comes together quickly with pantry staples and a couple of lemons, and it’s perfect for making ahead before a busy week, road trip, or family visit.
Serve these lemon-coated cereal bites in a big ceramic bowl in the center of the counter, just like a classic family snack mix. They’re great with coffee or tea in the afternoon, or alongside a simple fruit tray for a light dessert spread. For movie nights, mix them with a bowl of salty popcorn or roasted nuts for a sweet-salty combo. If you’re hosting brunch, set out small cups or ramekins so everyone can scoop their own portion and nibble while the rest of breakfast finishes up.
Lemon-Coated Corn Cereal Bites
Servings: 10-12
Ingredients
8 cups corn squares cereal
1 1/2 cups white baking chips
3 tablespoons unsalted butter
1/4 cup fresh lemon juice (about 2 lemons)
1 tablespoon lemon zest (finely grated, from about 1–2 lemons)
1 teaspoon vanilla extract
1/4 teaspoon fine sea salt
2–2 1/2 cups powdered sugar, plus more as needed
Directions
Line a large baking sheet with parchment paper for cooling later. Set a large mixing bowl on the counter and pour in the corn squares cereal so it’s ready to go.
In a medium microwave-safe bowl, add the white baking chips and butter. Microwave in 20–30 second bursts, stirring well after each, until the mixture is mostly melted and smooth. This usually takes about 1–1 1/2 minutes total, depending on your microwave.
Whisk the melted white chips and butter until completely smooth and a bit thick. Whisk in the lemon juice, lemon zest, vanilla extract, and salt. The mixture will thicken and look like a glossy, whipped lemon frosting. If it ever looks separated, keep whisking firmly until it comes back together.
Pour the warm lemon coating over the cereal in the large bowl. Using a rubber spatula, gently fold and toss until every piece is coated. Take your time so you don’t crush the cereal too much—some soft clumps and uneven spots are part of the homemade charm.
Sprinkle 1 cup of powdered sugar over the coated cereal and toss gently. Add another 1 cup of powdered sugar and keep folding until the cereal pieces are mostly separate and well covered, with a thick, soft coating. If the mixture still looks too sticky or glossy in spots, add the remaining 1/2 cup powdered sugar, a little at a time, until it looks dry to the touch but still slightly soft and clumpy.
