Ingredients
1 (8 oz) package cream cheese, softened
1 cup heavy whipping cream, very cold
1/2 cup granulated sugar
1 teaspoon vanilla extract (optional but nice)
1 tablespoon fresh lemon juice
1 (20 oz) can crushed pineapple, well drained
1 cup sliced strawberries or raspberries (fresh or thawed frozen, drained
1 (11 oz) can mandarin oranges, drained
1/2 cup maraschino cherries, drained and halved
2 medium ripe but firm bananas, sliced
3/4 cup chopped pecans
Pinch of salt
Directions
Lightly grease or spray a 9×13-inch glass baking dish, or line it with parchment if you’d like to lift the salad out to slice later. Set aside.
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy, scraping down the sides of the bowl as needed.
