Midnight Crunch: Just 4 ingredients. Even my picky toddler begs for a piece of this after dinner.

This 4-ingredient cookies and cream fudge is my go-to “Midnight Crunch” treat for those nights when I finally get the kitchen cleaned up, sit down…and immediately want something sweet. It’s creamy, crunchy, and loaded with cookie pieces, and it comes together in about 10 minutes of hands-on time. No candy thermometer, no fancy equipment—just a microwave, a bowl, and a pan lined with foil. It’s the kind of dessert my picky toddler actually asks for after dinner, which is saying a lot in our house. This isn’t a traditional old-fashioned fudge; it’s the easy, modern shortcut version that busy home cooks rely on when they want something special without spending all evening in the kitchen.
Serve this cookies and cream fudge cold from the fridge for the best “midnight crunch” texture alongside a cold glass of milk for kids or a cup of decaf coffee or herbal tea for adults. It makes a fun little dessert board with fresh berries, pretzels, and a few extra sandwich cookies for dipping. For entertaining, cut the fudge into small squares and pile them into a foil-lined tin or a simple white platter so the black-and-white swirls pop against the dark counter. It also packs well in lunchboxes or as a quick after-dinner bite when you don’t want to commit to a big slice of cake.
4-Ingredient Cookies and Cream Fudge
Servings: 16
Ingredients
3 cups (about 18 oz / 510 g) white chocolate chips
1 can (14 oz / 396 g) sweetened condensed milk
1 teaspoon pure vanilla extract
20 chocolate sandwich cookies (like Oreos), roughly chopped
Directions
Line an 8×8-inch baking pan with aluminum foil, letting it overhang the sides for easy lifting later. Lightly mist the foil with nonstick spray or rub with a tiny bit of butter to keep the fudge from sticking.
Roughly chop the chocolate sandwich cookies. I like to leave a mix of bigger chunks and smaller crumbs so you get that “midnight crunch” in every bite. Set aside about 1/4 cup of the chopped cookies for sprinkling on top.
In a large microwave-safe bowl, combine the white chocolate chips and the sweetened condensed milk. Microwave on HIGH in 20–30 second bursts, stirring well after each burst, until the mixture is mostly melted and smooth. This usually takes about 1 1/2 to 2 minutes total, depending on your microwave.
Once the mixture is smooth, stir in the vanilla extract until fully combined. The mixture will be thick and glossy.
Working quickly, fold in the chopped chocolate sandwich cookies (except the small portion you reserved for topping). Stir just until the cookies are evenly distributed; over-stirring can crush them too much.
Scrape the fudge mixture into the prepared foil-lined pan. Use a spatula to spread it into an even layer, pressing it gently into the corners.
