Ingredients
12 ounces short pasta (such as rotini, penne, or shells)
3 cups cooked, shredded or diced chicken (rotisserie or leftover)
1 (22–26 ounce) family-size can or jar of creamy chicken soup or sauce (such as cream of chicken or a similar creamy chicken cooking soup)
1 (12–16 ounce) bag frozen mixed vegetables (peas, carrots, corn, and green beans), not thawed
Optional but helpful: salt, black pepper, and a little butter or shredded cheese for topping
Directions
Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with cooking spray or a little butter.
Bring a large pot of salted water to a boil. Add the pasta and cook until just shy of al dente, about 1–2 minutes less than the package directions. The pasta will finish cooking in the oven. Drain well.
In a large mixing bowl, combine the cooked pasta, shredded chicken, the creamy chicken soup or sauce, and the frozen mixed vegetables. Stir until everything is evenly coated. If the mixture seems very thick, you can splash in a few tablespoons of water or milk to loosen it slightly.
Taste the mixture and season lightly with salt and black pepper if needed, remembering that the soup base may already be salty.
Spoon the mixture into the prepared 9×13-inch baking dish, spreading it into an even layer. If you like, dot the top with a few small pieces of butter or sprinkle with a handful of shredded cheese for extra richness.
Cover the dish tightly with foil and bake for 20 minutes. Remove the foil and continue baking for another 10–15 minutes, or until the casserole is bubbling around the edges and heated through, and the top is lightly golden in spots.
