Ingredients
2 medium cucumbers, very thinly sliced
1/2 medium white onion, very thinly sliced into rings
3/4 cup white vinegar (or distilled vinegar), plus 2–3 tablespoons water, to taste
Directions
Slice the cucumbers as thinly as you can so they look almost translucent—this helps them soak up the vinegar and stay extra crisp. A sharp knife works fine; a mandoline makes it even easier if you have one.
Slice the white onion into very thin rings. Separate the rings with your fingers so they don’t clump together in the salad.
Add the sliced cucumbers and onion rings to a medium plastic container with a tight-fitting lid (like basic fridge Tupperware). Fill it almost to the top, but leave a little space so you can shake or stir.
Pour the white vinegar over the cucumbers and onions, then add 2–3 tablespoons of water to slightly soften the tang while keeping things low carb. The liquid should mostly cover the vegetables; gently press them down with a spoon if needed.
Stir the cucumbers and onions in the vinegar mixture, or seal the container and give it a gentle shake, making sure everything is coated and starting to soak. The cucumbers will look pale green and the onions bright white in the clear brine.
Cover and refrigerate for at least 30 minutes to 1 hour, stirring once or twice if you can. The longer they sit (up to 24 hours), the more translucent, tangy, and crisp they become.
