Lemon cheesecake bars are a streamlined cousin of the classic baked cheesecake—same creamy tang, but far less fuss. Cheesecake itself traces back to ancient Greece, but the bar form is a very American innovation, born from our love of potlucks, bake sales, and desserts that can be cut, stacked, and carried. This 4-ingredient version leans on pantry staples to deliver a bright, citrusy treat with minimal effort. You get a buttery crust, a smooth, lemony filling, and that familiar cheesecake richness without water baths, springform pans, or long ingredient lists. They’re ideal for busy weeknights, casual entertaining, or any time you want something that feels special but doesn’t keep you tied to the kitchen.
These lemon cheesecake bars are lovely served chilled with a cup of hot coffee or black tea to balance the sweetness. For a light finish to a richer meal—think roast chicken or a creamy pasta—pair them with a simple bowl of fresh berries or sliced stone fruit to echo the bright citrus notes. If you’re serving them at a gathering, arrange the bars on a platter with a dusting of powdered sugar and a few lemon slices for color, and set them alongside something contrasting in texture, like crisp butter cookies or toasted nuts. They also play nicely with a small scoop of vanilla ice cream or lightly sweetened whipped cream if you want a more indulgent dessert plate.
4-Ingredient Lemon Cheesecake Bars
Servings: 12 bars
Ingredients
1 1/2 cups graham cracker crumbs (about 10–12 full sheets)
5 tablespoons unsalted butter, melted
16 ounces (2 packages) cream cheese, softened to room temperature
1 can (14 ounces) sweetened condensed milk
1/3 cup freshly squeezed lemon juice (about 2 lemons)
Directions
Preheat your oven to 325°F (165°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang on two sides so you can lift the bars out easily later.
Make the crust: In a medium bowl, combine the graham cracker crumbs and melted butter. Stir until the mixture looks like damp sand and holds together when pressed between your fingers.
Press the crust mixture firmly and evenly into the bottom of the prepared pan. Use the bottom of a measuring cup or glass to compact it well—this helps the crust hold together once baked.
Bake the crust for 8–10 minutes, just until lightly fragrant and set. Remove from the oven and let it cool slightly while you prepare the filling. Keep the oven at 325°F (165°C).
Prepare the filling: In a large bowl, beat the softened cream cheese with an electric mixer on medium speed until completely smooth, with no lumps. Take your time here; a smooth base is key to a silky cheesecake texture.
Gradually add the sweetened condensed milk, mixing on low to medium speed until fully combined and glossy. Scrape down the sides and bottom of the bowl to ensure everything is evenly incorporated.
Add the lemon juice and mix on low speed just until the filling is smooth and uniform. The mixture will thicken slightly as the lemon juice reacts with the dairy.
Pour the lemon cheesecake filling over the partially cooled crust, smoothing the top with a spatula to create an even layer.
Bake for 22–26 minutes, or until the edges are set and the center is mostly set but still has a slight jiggle when you gently shake the pan. Avoid overbaking; the bars will firm up as they cool.
Remove the pan from the oven and let the bars cool completely at room temperature. Once cooled, cover the pan and refrigerate for at least 3–4 hours, or until thoroughly chilled and set. Overnight is ideal for clean slices and best flavor.
Use the parchment overhang to lift the chilled cheesecake slab out of the pan and onto a cutting board. With a sharp knife wiped clean between cuts, slice into 12 bars (or smaller squares, if you prefer). Serve chilled.
