Nana left us this handwritten card and I finally deciphered her messy cursive. People always judge the color at first but they immediately go back for seconds.

This green fluff salad is straight off a worn, splattered recipe card my Nana kept tucked in the back of her church cookbook. I finally sat down and deciphered her looping cursive, and this is exactly the sweet, pastel-green bowl that showed up at every holiday and potluck. People always raise an eyebrow at the color, but after one scoop they inevitably circle back for seconds. It’s a very Midwestern dessert salad: pistachio instant pudding, canned pineapple, marshmallows, and whipped topping folded together into something that’s more about nostalgia and comfort than culinary precision. It comes together in minutes, chills in the fridge, and looks right at home in a vintage glass bowl on the counter.
Serve this green fluff salad well-chilled, scooped into a vintage glass bowl or individual dessert cups with a simple spoon for serving. It’s especially at home on a holiday table next to ham, turkey, or a classic potluck spread of casseroles and cold salads. Because it’s quite sweet, pair it with coffee or hot tea after a meal, or offer it alongside fresh fruit like sliced strawberries or grapes for contrast. It also works nicely as part of a dessert buffet with bar cookies, brownies, and simple cakes, where guests can take just a spoonful or go back for a generous second helping.
Green Fluff Salad
Servings: 8
Ingredients
1 (3.4 oz) box instant pistachio pudding mix
1 (20 oz) can crushed pineapple in juice, undrained
1 (8 oz) tub frozen whipped topping, thawed
2 cups mini marshmallows
1/2 cup chopped toasted pecans or walnuts (optional)
1/4 cup maraschino cherries, drained and chopped (optional, plus a few halves for garnish)
Pinch of kosher salt (optional, to balance sweetness)
Directions
In a medium mixing bowl, pour in the entire can of crushed pineapple with all of its juice.
Sprinkle the instant pistachio pudding mix evenly over the pineapple. Stir slowly but thoroughly until the pudding powder is fully dissolved and the mixture turns a soft green and begins to thicken slightly. This should take about 1–2 minutes.
