1 (3-ounce) box orange flavored gelatin mix
1 (20-ounce) can mandarin oranges, drained well
1 (16-ounce) container small curd cottage cheese
1 (8-ounce) tub frozen whipped topping, thawed
Directions
In a large mixing bowl, add the cottage cheese. Sprinkle the dry orange gelatin mix evenly over the top.
Stir the cottage cheese and dry gelatin together until the powder is fully incorporated and the mixture turns a light orange color with no dry spots remaining.
Gently fold in the thawed whipped topping using a spatula, turning the bowl as you go, until the mixture is smooth, thick, and a uniform creamy pastel orange.
Add the well-drained mandarin oranges to the bowl. Fold them in carefully so they stay mostly whole and are evenly distributed throughout the fluff.
Transfer the mixture to a clear glass serving bowl, smoothing the top so it has a thick, creamy, even surface like a fluffy orange cloud.
Cover the bowl tightly with plastic wrap and refrigerate for at least 2 hours, or until fully chilled and slightly set. This resting time lets the flavors meld and the texture firm up a bit.
