Lemon Blueberry Loaf

Ingredients
1 1/2 cups all-purpose flour, plus 1 tablespoon for tossing blueberries
1 cup granulated sugar
1/2 cup (1 stick) unsalted butter, softened to room temperature
2 large eggs, at room temperature
1/2 cup milk (whole or 2%), at room temperature
2 tablespoons fresh lemon zest (from about 2 lemons)
2 tablespoons fresh lemon juice
1 1/2 teaspoons baking powder
1/4 teaspoon fine salt
1 cup fresh blueberries (or frozen, unthawed)
Butter or nonstick spray, for greasing the ceramic loaf pan
Directions
Grease a ceramic loaf pan (about 9×5 inches) with butter or nonstick spray, making sure to get into the corners. If you like, line the bottom with a strip of parchment for easier removal. Preheat your oven to 350°F (175°C) and set the pan on a sturdy baking sheet so it’s easier to move in and out of the oven.
In a medium bowl, whisk together 1 1/2 cups of the flour, the baking powder, and the salt. Set this dry mixture aside. In a small bowl, toss the blueberries with the remaining 1 tablespoon of flour just to coat them lightly; this helps keep them from all sinking to the bottom of the loaf.
In a large mixing bowl, beat the softened butter and sugar together with a hand mixer (or a sturdy wooden spoon) until the mixture looks pale and fluffy, 2 to 3 minutes. This step gives you that soft, comforting texture Aunt Martha’s loaf always had.
