Easy moist Carrot Muffins
Ingredients:

1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
2 large eggs
1 cup granulated sugar
1/2 cup vegetable oil (or melted butter)
1 teaspoon vanilla extract
1 1/2 cups finely grated carrots (about 3 medium carrots)
1/2 cup chopped walnuts or raisins (optional)
