French Sable Cookies

Preparation
  1. In a large bowl, add butter, granulated sugar, powder sugar, and salt and beat until smooth, about 1 minute.
  2. Mix in egg yolks one at a time, followed by the vanilla.
  3. Slowly add in flour until just combined. Form dough into a rough ball and chill in the fridge for 30 minutes.
  4. Once chilled, divide the dough into two even portions and form into logs with round or square sides. Wrap tightly with plastic wrap and freeze for a minimum of 2 hours.
  5. When ready to bake, preheat oven to 325 degrees F and line a baking sheet with parchment paper.
  6. Sprinkle sparkling sugar on a large plate and roll the sides of the logs in the sugar.
  7. Place logs on a cutting board and slice into cookies about 1/3 inch thick.
  8. Place on cookie sheet and bake for 7-10 minutes.
  9. Allow cookies to cool for about 5 minutes, then transfer to a cooling rack.
