Braised Chicken over Cranberry Sauce Casserole

2 to 2 1/2 pounds bone-in chicken pieces (thighs and drumsticks work best)
1 1/2 teaspoons kosher salt, divided
1/2 teaspoon black pepper
2 tablespoons vegetable oil or light olive oil
1 small yellow onion, thinly sliced
2 cloves garlic, minced (optional but nice)
1 1/2 cups fresh or frozen cranberries
1/2 cup orange juice (or chicken broth, if you prefer less sweetness)
1/3 cup brown sugar, packed
1/4 cup chicken broth (in addition to the orange juice, for more sauce)
1 tablespoon apple cider vinegar
1 teaspoon dried thyme (or 1 tablespoon fresh, chopped)
1/2 teaspoon dried rosemary, crumbled
1 bay leaf
2 tablespoons butter, cut into small pieces
1 tablespoon cornstarch (optional, for thickening sauce)
2 tablespoons cold water (if using cornstarch slurry)
Chopped fresh parsley, for garnish (optional)
Directions
Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch casserole dish and set it aside.
Pat the chicken pieces dry with paper towels. Sprinkle them on all sides with about 1 teaspoon of the salt and the black pepper.
In a large skillet over medium-high heat, warm the oil until it shimmers. Add the chicken, skin side down, and brown it well, about 4–5 minutes per side. You may need to do this in batches so you don’t crowd the pan. Transfer the browned chicken pieces to the prepared casserole dish, skin side up.

Taste the sauce and adjust the seasoning, adding a pinch more salt or a splash of vinegar if you’d like a brighter flavor. Discard the bay leaf. Sprinkle with chopped fresh parsley, if using. Serve the chicken pieces over mashed potatoes, rice, or noodles, spooning plenty of cranberry sauce from the casserole over the top.
