Lady spoons cranberry sauce over raw chicken in casserole. This one disappears fast

This braised chicken over cranberry sauce casserole is the kind of dish that feels like it’s been on Midwestern tables forever, even if you’re making it for the very first time. It reminds me of the sort of supper my mother would pull together when the days turned short and the fields out back were nothing but stubble and snow. Cranberries showed up at our house mostly around the holidays, but my grandmother, who hated to waste a thing, would tuck extra bags into the freezer and bring them out later in winter to brighten up a simple pan of chicken. The sweetness of the berries, mellowed with a little brown sugar and onion, wraps itself around the chicken as it braises, turning an ordinary casserole into something that feels a bit special without being fussy. This is the kind of recipe you make when company’s coming but you still want supper to taste like home—warm, comforting, and just a little bit old-fashioned in the best way.
This casserole is lovely alongside a good, buttery mashed potato or a pan of simple buttered egg noodles, something that will soak up all those rosy, savory juices. On our table, I like to add a green vegetable for balance—steamed green beans with a little salt and pepper, or roasted Brussels sprouts if I’m feeling modern. A crisp salad with cabbage, apples, and a tangy dressing also plays nicely against the sweetness of the cranberries. If you’re feeding a crowd, a basket of warm dinner rolls or a sliceable loaf of homemade bread makes it easy for everyone to swipe up the last bit of sauce from their plates. For dessert, something plain and cozy—like applesauce cake or vanilla pudding—lets the flavors of the chicken and cranberries linger without competing.
Braised Chicken over Cranberry Sauce Casserole
Servings: 4–6 servings

Ingredients
2 to 2 1/2 pounds bone-in chicken pieces (thighs and drumsticks work best)
1 1/2 teaspoons kosher salt, divided
1/2 teaspoon black pepper
2 tablespoons vegetable oil or light olive oil
1 small yellow onion, thinly sliced
2 cloves garlic, minced (optional but nice)
1 1/2 cups fresh or frozen cranberries
1/2 cup orange juice (or chicken broth, if you prefer less sweetness)
1/3 cup brown sugar, packed
1/4 cup chicken broth (in addition to the orange juice, for more sauce)
1 tablespoon apple cider vinegar
1 teaspoon dried thyme (or 1 tablespoon fresh, chopped)
1/2 teaspoon dried rosemary, crumbled
1 bay leaf
2 tablespoons butter, cut into small pieces
1 tablespoon cornstarch (optional, for thickening sauce)
2 tablespoons cold water (if using cornstarch slurry)
Chopped fresh parsley, for garnish (optional)
Directions
Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch casserole dish and set it aside.
Pat the chicken pieces dry with paper towels. Sprinkle them on all sides with about 1 teaspoon of the salt and the black pepper.
In a large skillet over medium-high heat, warm the oil until it shimmers. Add the chicken, skin side down, and brown it well, about 4–5 minutes per side. You may need to do this in batches so you don’t crowd the pan. Transfer the browned chicken pieces to the prepared casserole dish, skin side up.
In the same skillet, reduce the heat to medium. Add the sliced onion and cook, stirring, until softened and lightly golden, about 5 minutes. If using, stir in the minced garlic and cook just until fragrant, about 30 seconds. Remove the pan from the heat.
In a medium bowl, combine the cranberries, orange juice, brown sugar, chicken broth, apple cider vinegar, thyme, rosemary, bay leaf, and the remaining 1/2 teaspoon salt. Stir to dissolve the sugar as much as you can.
Pour the cranberry mixture into the skillet with the onions and stir, scraping up any browned bits from the bottom of the pan. Those little bits add a lot of flavor.
Carefully pour the cranberry-onion mixture over and around the chicken pieces in the casserole dish. Dot the top with the small pieces of butter.
