For a mocha version, dissolve 1–2 teaspoons of instant espresso powder in the hot cream before pouring it over the chocolate. You can also play with texture by layering the chocolate whipped mixture with crushed cookies, toasted nuts, or granola in clear glasses for a quick parfait. If you prefer a lighter texture, stop whipping the cream at very soft peaks so the final dessert is more mousse-like; for a slightly denser, almost truffle-like cup, chill the filled cups longer (2–3 hours) and serve in smaller portions.
