This cozy 4-ingredient ground beef taco casserole is one of those weeknight lifesavers that feels a little bit like a party in a baking dish. It has all the flavors of crunchy beef tacos, but you layer everything together and let the oven do the work. The crushed tortilla chips give it that familiar taco crunch, while the cheesy, beefy filling makes it feel like real comfort food. This is the kind of dish I pull out on busy school nights, game days, or when we have a couple extra kids at the table and I need something everyone will happily dig into without any fuss.
This casserole pairs really nicely with simple, fresh sides that balance out the cheesy, beefy goodness. A bowl of shredded lettuce, chopped tomatoes, and sliced olives on the table lets everyone build their own little taco-style plate alongside the casserole. You can add a quick side of corn—either canned and warmed with a bit of butter, or a simple corn and black bean salad—for a little extra color and fiber. If you have time, some warm refried beans or a pot of Mexican-style rice makes it feel like a full restaurant-style spread. And for an easy finish, set out salsa, sour cream, and a squeeze bottle of ranch or hot sauce so each person can dress up their plate just the way they like it.
4-Ingredient Oven-Baked Ground Beef Taco Casserole
Servings: 6 servings

Ingredients
1 pound ground beef (lean if possible)
2 cups crushed tortilla chips (lightly packed)
1 packet (about 1 ounce) taco seasoning
2 cups shredded cheese (Mexican blend or cheddar, divided
Directions
Preheat your oven to 350°F (175°C). Lightly grease a 9×9-inch or similar baking dish.
In a large skillet over medium heat, cook the ground beef, breaking it up with a spoon, until it is browned and no longer pink. Drain off any excess grease.
Sprinkle the taco seasoning over the cooked beef and add 2–3 tablespoons of water. Stir well and let it simmer for 2–3 minutes so the flavors soak into the meat.
Spread half of the crushed tortilla chips evenly over the bottom of the prepared baking dish to form a loose crust.
Spoon the seasoned ground beef over the layer of chips, spreading it out evenly.
Sprinkle 1 cup of the shredded cheese over the beef layer.
Top with the remaining crushed tortilla chips, then finish with the remaining 1 cup of shredded cheese on top.
Bake in the preheated oven for 18–22 minutes, or until the cheese is melted, bubbly, and the edges are just starting to turn golden.
