Ingredients
1 pound shrimp, peeled and deveined
2 cups cauliflower rice
1 cup shredded cheddar cheese
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
2 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon paprika
Salt and pepper to taste
1 tablespoon chopped fresh parsley (optional, for garnish)
Directions
Preheat your oven to 375°F (190°C).
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
Add the shrimp to the skillet and cook until they are pink and opaque, about 3-4 minutes. Remove the shrimp and set aside.
