French Onion Short Rib Soup

Ingredients
2 pounds bone-in beef short ribs
2 tablespoons olive oil
4 large yellow onions, thinly sliced
4 cloves garlic, minced
1 tablespoon all-purpose flour
1 cup dry red wine
8 cups beef broth
2 sprigs fresh thyme
1 bay leaf
Salt and freshly ground black pepper, to taste
1 baguette, sliced
2 cups grated Gruyère cheese
Directions
Preheat your oven to 325°F (165°C).
Season the short ribs with salt and pepper. In a large oven-safe pot or Dutch oven, heat the olive oil over medium-high heat. Brown the short ribs on all sides, then remove them from the pot and set aside.
Reduce the heat to medium and add the onions to the pot. Cook, stirring occasionally, until the onions are deeply caramelized, about 25-30 minutes.
