My mother-in-law has been toting this little frozen lemon blueberry salad to every church picnic and family cookout since the late 1970s, and I swear she never brings home a full dish. It’s one of those Midwestern potluck miracles: only three ingredients, about five minutes of effort, and it comes out looking like you fussed with it all afternoon. Fresh blueberries get folded into a tangy lemon yogurt and a cloud of whipped topping, then the whole thing is smoothed into a glass dish and frozen until firm. It slices like a pretty frozen dessert salad, with dark berries peeking through a pale, creamy lemon layer, and someone will ask for the recipe every single time.
Serve this frozen lemon blueberry salad straight from the freezer on a warm day, cut into neat squares from a glass baking dish. It’s lovely alongside grilled chicken, burgers, or brats at a picnic, and it sits happily next to bowls of potato salad, coleslaw, and baked beans on a potluck table. Offer it as a light, refreshing dessert after a heavier meal, or set it out with coffee and iced tea in the afternoon. A few extra fresh blueberries scattered over the top right before serving make it look even more special without any extra work.
3-Ingredient Frozen Lemon Blueberry Salad
Servings: 9–12
Ingredients
3 cups fresh blueberries, rinsed and well dried
3 cups lemon yogurt (about four 6-ounce containers), well chilled
1 (8-ounce) tub frozen whipped topping, thawed in the refrigerator
Directions
Lightly grease or spray a 9×9-inch glass baking dish, or wipe it with a thin film of neutral oil, then wipe out any excess with a paper towel so only a very light coating remains. This makes it easier to cut and serve later while still keeping the sides clear so you can see the pretty layers.
In a large mixing bowl, add the chilled lemon yogurt. Stir it briefly with a spatula or spoon until it is smooth and no watery separation remains.
Gently fold the thawed whipped topping into the lemon yogurt. Use a spatula and a light hand, turning the bowl as you go, until the mixture is evenly combined, thick, and creamy with no big streaks of plain yogurt or whipped topping.
Reserve a small handful of the best-looking blueberries for the top, if you like. Add the remaining blueberries to the lemon mixture and gently fold them in just until they are evenly distributed, being careful not to crush them so the salad stays pale and creamy with distinct dark berries.
Pour the lemon blueberry mixture into the prepared 9×9-inch glass dish. Smooth the top with the back of a spoon or spatula so you have an even, creamy surface. If you reserved blueberries, scatter them over the top and press them very lightly so they sit in the surface without disappearing.
