Nana Clara has been making this simple 3 ingredient sweet treat for decades and we still fight over the last scoop. It practically vanishes before dinner is even served.

This 3-ingredient frozen orange salad is one of those nostalgic Midwestern church-basement desserts that somehow sneaks onto the dinner table and disappears before the main course is even served. In my family, it’s known as Nana Clara’s sweet treat, and we still low-key fight over the last scoop at every holiday. It’s creamy, pale orange, and packed with mandarin pieces—basically orange sherbet meets fluff salad. You stir everything together in one bowl, spread it in a glass casserole dish, freeze it, and you’re done. It’s perfect for busy weeknights, potlucks, or any time you want something cold, citrusy, and ridiculously easy.
Serve this frozen orange salad straight from the freezer in scoops or squares, using a sturdy spoon or spatula. It’s great alongside grilled chicken, ham, or a simple baked pasta when you want something cool and sweet to round out the meal. I like to set it on the counter for 5–10 minutes before serving so it softens just enough to scoop easily. Pair it with iced tea, lemonade, or coffee after dinner. For parties, you can spoon it into small bowls or cups and top with extra mandarin segments for a pretty, no-fuss dessert.
3-Ingredient Frozen Orange Salad
Servings: 8-10
Ingredients
1 (11-ounce) can mandarin oranges in juice, drained well
1 pint (about 2 cups) orange sherbet, slightly softened
1 (8-ounce) tub frozen whipped topping, thawed
Directions
Clear a space in your freezer for a 2-quart glass casserole dish (an 8×8- or 9×9-inch works well). Set the empty dish on the counter so it’s ready to go.
Set the orange sherbet out at room temperature for about 10–15 minutes until it’s soft enough to scoop and stir but not melted. Thaw the whipped topping in the fridge if it’s still frozen.
Drain the mandarin oranges very well in a colander, pressing gently with the back of a spoon to remove excess juice. This keeps the salad from getting icy.
In a large mixing bowl, add the softened orange sherbet. Stir it with a spoon or spatula until smooth and creamy.
Fold the thawed whipped topping into the sherbet. Start gently, then stir until the mixture is evenly pale orange with no big streaks of white.
Add the well-drained mandarin oranges to the bowl. Gently fold them in so the segments stay mostly intact and are evenly distributed throughout the mixture.
Pour or scrape the mixture into the glass casserole dish. Smooth the top with a spatula so you have an even, creamy layer.
Cover the dish tightly with plastic wrap or a lid to protect it from freezer odors and ice crystals.
Freeze for at least 4 hours, or until firm enough to scoop cleanly. For best texture, freeze overnight if you have time.
When ready to serve, let the dish sit on the counter for 5–10 minutes to soften just slightly. Scoop into bowls or cut into squares and serve immediately. Return any leftovers to the freezer promptly.
