This low carb jalapeño popper casserole bake is my weeknight answer to those restaurant-style jalapeño poppers I crave but never have time to make. Instead of stuffing and wrapping individual peppers, everything gets layered into one bubbly, cheesy pan that tastes like game-day food but works for a Tuesday night. The flavors are inspired by classic jalapeño poppers—creamy cheese, smoky bacon, and just enough heat—only we skip the breading and keep things simple and low carb. It’s the kind of dish you can throw together after work, pop in the oven, and let it do its thing while you answer emails or help with homework. If you’re trying to eat fewer carbs without feeling like you’re on a “diet,” this is one of those cozy, comfort-food recipes that makes it feel easy.
This casserole is rich and cheesy, so I like to pair it with something fresh and lighter on the side. A simple green salad with a tangy vinaigrette helps cut through the richness and comes together while the casserole bakes. Steamed or roasted veggies—like broccoli, green beans, or asparagus—also work really well and keep the whole meal low carb. If you’re feeding a mixed crowd, you can serve it with a side of rice, roasted potatoes, or even some warm crusty bread for anyone who isn’t watching carbs. Leftovers reheat nicely for lunch the next day, and I’ll often spoon a scoop over some greens for an easy “deconstructed” lunch bowl.
Low Carb Jalapeño Popper Casserole Bake
Servings: 6
Ingredients
6 slices bacon, chopped
2 tablespoons butter
1 small onion, finely diced (optional but adds flavor)
4–5 fresh jalapeños, seeded and diced (leave some seeds if you like extra heat)
4 ounces cream cheese, softened
1/2 cup sour cream
1/2 cup mayonnaise
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon smoked paprika (optional, for a smoky flavor)
1/2 teaspoon salt, or to taste
1/4 teaspoon black pepper
2 cups cooked chicken, shredded or chopped (rotisserie works great)
1 1/2 cups shredded cheddar cheese, divided
1 cup shredded mozzarella cheese, divided
2 tablespoons grated Parmesan cheese (for topping)
2 tablespoons chopped fresh parsley or green onions, for garnish (optional)
Directions
Preheat your oven to 375°F (190°C). Lightly grease a 9×9-inch or similar-sized baking dish and set aside.
In a large skillet over medium heat, cook the chopped bacon until crispy. Use a slotted spoon to transfer the bacon to a paper towel–lined plate, leaving about 1 tablespoon of bacon drippings in the pan.
