Straight from the oven, my husband quickly polished off several by himself!

In our cozy Midwestern home, we love finding ways to enjoy comfort foods while keeping things a bit lighter. These low carb cheesy cauliflower rounds are a delightful twist on a classic favorite, offering all the cheesy goodness with a healthier spin. Cauliflower serves as the perfect canvas for this dish, absorbing the rich flavors while providing a satisfying texture. It’s a great way to sneak in some veggies for those little ones (or even the grown-ups) who might be a bit hesitant. These rounds are perfect for a family gathering or a simple weeknight meal.
These cheesy cauliflower rounds pair wonderfully with a crisp, fresh garden salad. A side of grilled chicken or a hearty bowl of tomato soup would also complement them nicely. For a little more indulgence, serve them alongside some garlic buttered green beans or a light cucumber and dill salad. They’re versatile enough to be served as an appetizer or as a side dish to your main course.
