Oven Baked Cheesy Sausage and Potato Bake

Ingredients
1 pound of your favorite sausage, sliced into 1/2 inch pieces
2 pounds of potatoes, peeled and cubed
1 cup of shredded cheddar cheese
1 tablespoon of olive oil
1 teaspoon of dried thyme
Salt and pepper to taste
Fresh parsley, chopped, for garnish
Directions
Preheat your oven to 400°F (200°C).
In a large mixing bowl, toss the cubed potatoes with olive oil, dried thyme, salt, and pepper.
Spread the potatoes evenly in a baking dish and bake in the oven for about 20 minutes, or until they start to turn golden.
Remove the baking dish from the oven and add the sliced sausages. Stir to combine and return to the oven.
Bake for an additional 20-25 minutes, or until the sausages are cooked through and have a nice brown crust.
Sprinkle the shredded cheddar cheese over the top and bake for another 5-7 minutes, or until the cheese is melted and bubbly.
