For a cozier, old-fashioned flavor, add 1/2 teaspoon ground cinnamon or a pinch of ground nutmeg with the sugar and cornstarch. If your strawberries are very sweet, you can reduce the sugar to 1/3 cup; if they’re out-of-season and a bit tart, add 1 or 2 extra tablespoons of sugar.
