Uncle Joe swears he invented this banana pudding pie, but I’m 99% sure he just scrolled past it on his phone one night and claimed it as his own. Either way, it’s the only dessert I’m making for the foreseeable future because it hits that perfect sweet spot: it looks impressive in a round pie dish, tastes like childhood, and takes almost no effort after a long workday. Vanilla wafers form a quick crust, sliced bananas get tucked into a thick, creamy pudding filling made with cold milk, and the whole thing is topped with a soft, swirled layer of whipped topping. It chills in the fridge while you do literally anything else, then comes out looking like you fussed way more than you did.
Serve this banana pudding pie well-chilled, straight from the fridge, with a pot of coffee or iced coffee if it’s warm out. It’s great after a simple weeknight dinner like grilled chicken or pasta because it feels light and creamy instead of heavy. For a little extra flair, sprinkle a few crushed vanilla wafers on each slice right before serving, or add a small dollop of extra whipped topping on the side. If you’re taking it to a cookout or family gathering, keep it in a cooler until dessert time so the filling stays thick and the swirled top holds its shape.
Banana Pudding Pie

Ingredients
2 cups vanilla wafer cookies, finely crushed (about 60–70 cookies)
6 tablespoons unsalted butter, melted
1/4 cup granulated sugar (for the crust, optional but helps it hold together)
2 large ripe but firm bananas, sliced into 1/4-inch rounds
2 boxes (3.4 ounces each) instant vanilla pudding mix
3 cups cold whole milk (or 2% milk)
1 cup heavy whipping cream, cold
3 tablespoons powdered sugar
1 teaspoon vanilla extract
8–10 whole vanilla wafers, for layering and garnish (optional)
Directions
Make the vanilla wafer crust: In a medium bowl, stir together the finely crushed vanilla wafers and granulated sugar (if using). Pour in the melted butter and mix until all the crumbs are evenly coated and the mixture looks like damp sand.
Press and chill the crust: Pour the crumb mixture into a 9-inch round pie dish. Using the bottom of a measuring cup or glass, press the crumbs firmly and evenly across the bottom and up the sides of the dish. Pop the crust into the fridge for at least 15–20 minutes while you prep the filling so it sets a bit.
Slice the bananas: Peel the bananas and slice them into 1/4-inch rounds. Set aside. If you’re prepping a bit ahead, you can very lightly toss the slices with a teaspoon of lemon juice to slow browning, but it’s not essential if you’ll assemble right away.
Make the pudding layer: In a large mixing bowl, whisk together the instant vanilla pudding mixes and cold milk for about 2 minutes, until thick and smooth. Let it sit for another 2–3 minutes to fully thicken. You want it to be quite thick so the pie slices cleanly.
Whip the cream: In a separate bowl, use a hand mixer or stand mixer to beat the cold heavy cream, powdered sugar, and vanilla extract on medium-high speed until soft but sturdy peaks form. Don’t overbeat; you want it thick and spreadable, not grainy.
Fold some whipped cream into the pudding: Scoop about 1 cup of the whipped cream into the bowl of pudding. Gently fold it in with a spatula until the mixture is smooth and lighter in color. This gives you that thick whipped base with soft pieces throughout instead of a dense pudding layer.
Layer the bananas and wafers: Take the chilled crust out of the fridge. Arrange a single layer of banana slices over the bottom of the crust. If you like more texture, tuck a few whole or broken vanilla wafers between the banana slices, pressing them gently into place.
Add the pudding filling: Spoon the pudding-whipped cream mixture over the bananas and wafers, spreading it evenly to the edges of the crust. Gently tap the pie dish on the counter a couple of times to help the filling settle and remove any big air pockets.
