2 tablespoons butter
3 cloves garlic, minced
1 cup heavy cream
4 ounces cream cheese, softened and cut into cubes
1/2 cup grated Parmesan cheese
1 teaspoon Italian seasoning (or a mix of dried basil and oregano)
1/4 teaspoon crushed red pepper flakes (optional, for a little warmth)
5–6 ounces fresh baby spinach (about 4–5 packed cups) or 1 (10-ounce) box frozen spinach, thawed and well-drained
1 1/2 cups shredded mozzarella cheese
2 tablespoons grated Parmesan cheese (for topping)
Fresh parsley, chopped, for garnish (optional)
Directions
Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish or similar casserole dish and set aside.
Cut the chicken breasts in half lengthwise if they are thick, so they cook more evenly. Pat them dry with paper towels. Season both sides with about 1/2 teaspoon salt, 1/4 teaspoon black pepper, and the garlic powder.
