Over the years, I’ve learned that casseroles are forgiving friends, happy to bend to what you have on hand. For a different flavor, you can use boneless, skinless chicken thighs instead of breasts; they stay especially tender and are just as low in carbs. If you enjoy a smokier taste, add a handful of crumbled cooked bacon on top before baking, or stir a few tablespoons of sun-dried tomatoes into the sauce for a little tang and color. You can also swap the mozzarella for an Italian blend cheese, or use part provolone for a more old-fashioned, deli-style flavor. If you’re cooking for someone who doesn’t care for spinach, try using chopped kale (sauté it a bit longer before adding the cream) or a mix of spinach and sliced mushrooms. To stretch the dish without adding many carbs, layer in some lightly steamed cauliflower florets around the chicken before pouring over the sauce; they’ll soak up the flavor and make the bake heartier. For advance prep, assemble the casserole earlier in the day, cover, and refrigerate. When you’re ready to bake, set it on the counter while the oven preheats, then add 5–10 minutes to the baking time, checking that the chicken is cooked through. If you prefer a lighter sauce, you can replace part of the heavy cream with unsweetened almond milk and add a bit more Parmesan to help it thicken. However you tinker with it, keep the spirit the same: simple, comforting, and generous enough to feed whoever happens to pull up a chair.
