This slow cooker 5-ingredient creamy Italian chicken pasta is the kind of dish that makes the whole house smell like a hug. It reminds me of the casseroles we used to take to church potlucks back in the Midwest—simple pantry ingredients, nothing fancy, but everyone went back for seconds. The magic here is that you just layer everything in the crock, walk away, and a few hours later you’ve got tender shredded chicken and rotini wrapped in a rich, herby cream sauce. It’s the sort of comforting bowl that makes neighbors wander over asking what on earth smells so good, and they never believe it only took five ingredients.
Serve this creamy Italian chicken pasta straight from the slow cooker into warm bowls, with a simple green salad or steamed broccoli to balance the richness. A slice of crusty bread or warm dinner roll is perfect for swiping up every bit of that sauce. If you like, add a sprinkle of extra Parmesan and a crack of black pepper on top. It pairs nicely with iced tea or a light white wine, and it makes wonderful leftovers for lunch the next day.
Slow Cooker 5-Ingredient Creamy Italian Chicken Pasta
Servings: 6

Ingredients
2 pounds boneless, skinless chicken breasts
1 (16-ounce) bottle creamy Italian salad dressing
1 (10.5-ounce) can condensed cream of chicken soup
8 ounces rotini pasta, uncooked (about 3 cups dry)
1 cup grated Parmesan cheese, plus more for serving if desired
Directions
Lightly grease the inside of a 5- to 6-quart slow cooker with a bit of oil or nonstick spray for easier cleanup.
Lay the chicken breasts in a single layer on the bottom of the slow cooker.
In a medium bowl, whisk together the creamy Italian salad dressing and the condensed cream of chicken soup until smooth and well blended.
Pour the dressing and soup mixture evenly over the chicken, making sure the chicken is mostly submerged in the sauce.
Cover and cook on LOW for 4 to 5 hours, or on HIGH for about 2 to 3 hours, until the chicken is very tender and easily shreds with a fork.
About 30 minutes before serving, cook the rotini pasta in a large pot of well-salted boiling water according to package directions until just al dente. Drain well.
While the pasta cooks, use two forks to shred the chicken directly in the slow cooker, stirring it into the creamy sauce so it breaks up into bite-size pieces.
Stir the grated Parmesan cheese into the hot shredded chicken and sauce until melted and the sauce is thick, creamy, and speckled with herbs from the dressing.
Add the drained, hot rotini to the slow cooker and gently fold it into the creamy chicken mixture until every piece of pasta is well coated and the sauce looks thick and glossy with little golden droplets of fat on top.
Cover and let the pasta sit on WARM or LOW for 5 to 10 minutes to allow the flavors to mingle and the sauce to cling to the rotini. Taste and adjust with a pinch of salt if needed.
Serve the creamy Italian chicken pasta straight from the slow cooker, with extra Parmesan on top if you like.
