This has recently been my preferred choice – I’ve made it a few times in the past weeks!

The herbed cheese tart is a delightful concoction rooted in the rustic kitchens of France, where the marriage of flaky pastry and rich cheese creates a harmonious dish. It’s a versatile choice for brunch, a light lunch, or an elegant appetizer at a dinner party. The beauty of this tart lies in its simplicity and the aromatic herbs that infuse the cheese with an earthy fragrance. Making this tart is a wonderful way to explore the art of pastry and the delicate balance of savory flavors.
This herbed cheese tart pairs beautifully with a fresh green salad, lightly dressed with a vinaigrette. It can also be served alongside a bowl of roasted tomato soup or a chilled gazpacho for a refreshing contrast. A glass of crisp white wine or a light red complements the richness of the cheese, making it a perfect choice for a relaxed meal with friends or family.
Herbed Cheese Tart
Servings: 6 to 8 servings
Ingredients
1 sheet of puff pastry
1 cup grated Gruyère cheese
1/2 cup ricotta cheese
3 large eggs
1/4 cup heavy cream
1 tablespoon fresh thyme, chopped
1 tablespoon fresh rosemary, chopped
Salt and pepper to taste
1 tablespoon olive oil
Directions
Preheat your oven to 375°F (190°C).
Roll out the puff pastry on a lightly floured surface and fit it into a tart pan, trimming the edges.
In a large bowl, whisk together the eggs and heavy cream until well combined.
Stir in the Gruyère cheese, ricotta cheese, thyme, rosemary, salt, and pepper.
Pour the filling into the prepared pastry shell.
Brush the edges of the pastry with olive oil to ensure a golden crust.
Bake in the preheated oven for 25-30 minutes, or until the filling is set and the crust is golden brown.
Allow the tart to cool slightly before slicing and serving.
